Snijd de courgette, aubergine en paprika\u2019s in kleine blokjes en schep ze in een braadslede om met de knoflook, ui, tomaatjes, verse kruiden, zout, versgemalen zwarte peper, balsamico-azijn en 3 eetlepels olijfolie.<\/li>\n\n\n\n<li>Rooster de groenten in de oven in 25 &#8211; 30 min. lichtbruin en gaar, schep ze tussendoor 1 &#8211; 2 keer om.<\/li>\n\n\n\n<li>Bereid de quinoamix volgens de aanwijzingen op het pak en schep de gare quinoa door de geroosterde groente in de braadslede. Voeg naar smaak zout, peper en olijfolie toe.<\/li>\n\n\n\n<li>Schep de quinoa en groente in een schaal en verdeel de olijven en feta erover.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip:<\/strong>&nbsp;Neem groenten van het seizoen, dus vervang de aubergine en paprika\u2019s in de herfst door blokjes pompoen met paddenstoelen, en in de winter
